Al Gatto Verde is situated within the property of Casa Maria Luigia, a welcoming guest house run by Massimo Bottura and his wife Lara Gilmore. Here, the focus is on wood-fired cuisine, Emilian flavours, and a celebration of the seasons.

THE CHEF AND THE TEAM
Jessica Rosval discovered her passion for cooking at fifteen and has since honed her skills over two decades. In her hometown of Montreal she trained in classic French cuisine before moving to British Columbia, immersing herself in the territories and cuisine of the Pacific North West. In 2013 she moved to Italy and joined the Osteria Francescana team. in 2019 she became Chef de Cuisine at Casa Maria Luigia and in 2020 co-founded AIW, a non-profit association that creates job training programs for migrant women in Modena. This led to the opening of Roots, a social restaurant in the heart of the city and a full time culinary training program.
Rosval’s accolades include Chef of the Year by Guide de L’Espresso in 2021, Best Brunch 2022 by 50 Top Italy Luxury, ‘Rising star” by The Best Chef Awards 2022 and ‘Best female chef’ by Guida Identità Golose 2023. Francescana at Maria Luigia and Al Gatto Verde gained recognition in 50 Top Italy, while Al Gatto Verde earned Michelin and Le guide de L’Espresso recognition. Her social impact earned her the title of ‘Champions of Change’ by The World’s 50 Best Restaurant Awards in 2024. With enthusiasm and dedication, Jessica leads a young, international team, encouraging everyone to contribute their own unique experiences and memories, creating a menu that is both fiery and magical, always ready to embrace the unexpected.
